Our Story

A cafe that cooks like a restaurant.

Kaffeine Cafe & Kitchen started as a two-group espresso bar with six stools and a single hot plate. The kitchen came later, and it changed everything about how we cook, buy and pour.

Sana and Bilal opened the first Kaffeine counter on a side lane off Zamzama with money saved from a decade of restaurant shifts between Karachi and Dubai. The plan was small: good espresso, one pastry case, close by nine. Guests kept asking what was for dinner, so we knocked through the back wall, put in a grill and a deck oven, and became a kitchen with a coffee bar attached.

The menu has always been written the same way. We cook the food we actually eat at home, then hold it to restaurant standards. Karahi masala goes into a slow-braised short rib. The chapli kebab is ground coarse and pressed thin so the edges catch on the fire. Sourdough is folded the night before and baked at six in the morning, which is also when the roaster comes on.

Seven years in, most of the original team is still here. The dining room seats sixty-two, the lights stay low, and the last order goes out well past midnight.

If a dish can’t be explained in one sentence, it goes back to the kitchen. Everything on this menu has a reason to be there.

Four things we take seriously

The kitchen’s point of view

Fire, smoke and one clear idea per plate. Half the menu passes over charcoal or through the deck oven, which means the seasoning stays simple: salt, acid, and the spice mixes we grind on Mondays. Portions are built for sharing across the middle of the table, because that is how people actually eat here.

Where the food comes from

Vegetables arrive six mornings a week from a grower in Thatta and are used within two days. Beef is dry-aged twenty-one days by a butcher we have worked with since the first year. Cheese for the burrata plate is made in Lahore. If we cannot get an ingredient properly, the dish comes off the board until we can.

The coffee program

We roast three lots at a time on a 5kg drum in the back: a washed Ethiopian for filter, a Colombian for the house espresso, and a rotating seasonal. Espresso is dialled in twice a day and again after every bag change. Filter is brewed by the cup. Ask the bar what is tasting best and you will get an honest answer.

The people who run it

Twenty-eight of us across kitchen, bar and floor. Four people have been here since 2017, including Rashid, who started on dishes and now runs the grill section. Everyone tastes the menu before service, so the person taking your order has eaten the dish they are recommending.
